Black Bean Walnut Bites w/ Garlic Cashew Cheese

1 1/2 cup cooked black beans
4 tablespoons Braggs Liquid Aminos
2/3 cup chopped walnuts
2 tablespoons nutritional yeast
2 1/2 tablespoons ground flaxseeds
Several drops of liquid smoke
1/3 cup chopped onion
1/3 cup chopped red pepper
1/3 cup chopped carrots
2 teaspoons cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 cup chopped fresh cilantro
2/3 cup vital wheat gluten
Salt and pepper, to taste


Mash black beans well with a fork, until it resembles refried beans. Add other ingredients. Shape into 4 large burgers or 8 small burgers. Sauté in coconut oil until nicely browned on both sides. Serving: Place on a large lettuce leaf and top with garlic cashew cheese (recipe below).

Garlic Cashew Cheese

2 cups of raw cashew pieces (soaked in water overnight)
1/2 cup of water
1 1/2 teaspoon of rice vinegar (unseasoned) or apple cider vinegar
3 teaspoon of nutritional yeast
1 1/4 teaspoon of mellow red miso
5 – 8 cloves of fresh garlic
1 teaspoon of sea salt (or to taste)
Dash of agave nectar (optional)

Combine all ingredients in a blender or food processor and blend until well blended and smooth. Dollop on top of Black Bean Walnut Bites.
