Raw Caramel Apples


Makes 3
(please use all organic ingredients to spare your children and the planet the pesticides)

Start by inserting sticks into 3 apples (you may need to use a thin blade knife to get it started)raw-caramel-apples

Part 1, Caramel Sauce Coating:
1 cup dates
1 cup cashews
2 tsp Cinnamon
2-3 Tbsp maple syrup
Water, as needed

Thoroughly blend dates with cashews, cinnamon, maple syrup and a little water to get a smooth, thick consistency. Taste and add more maple syrup if needed. Cover the apples completely with the “caramel”.

Part 2: Chocolate Drizzle and Nuts:
1/4 cup chopped peanuts and/or almonds
2-3 Tbsp cacao (or carob if you are avoiding caffeine)
2-3 Tbsp maple syrup

Blend the cacao and maple syrup until smooth. Taste to see if you want to add more of any ingredient. Drizzle over the apples. Roll coated apples in the chopped nuts until they stick to the outside.

Note: When making these for a party, make them without nuts and make sure that nothing that touched the nuts touches the apples. Kids with nut allergies will be very grateful!
