Apple Caramel Cobbler Bites

Ingredients:

• 3 cups raw, unsalted walnuts

• 3 cups chopped apples

• 1 cup pitted dates

• 1/2 cup raisins

 

1. Soak walnuts in water overnight*

2. Drain soaked walnuts and rinse thoroughly with fresh water

3. Pulse walnuts, apples, and dates together in a food processor until coarsely mixed (should be chunky rather than smooth)

4. Stir the raisins into the blended mixture

5. Roll mixture into bite sized pieces

6. Dehydrate bite sized pieces overnight in a dehydrator, or bake at lowest temperature possible in glass pan for 30 minutes

 

Caramel Sauce:

• 1 cup dried apricots

• 2 cups filtered water

• 2 Tbs coconut oil (can be replaced with 2 Tbs of coconut mana or the meat of one Thai coconut)

• 2 Tbs coconut sugar

• 4 pitted dates

• 1/8 tsp sea salt

 

1. Process apricots, water, salt, coconut sugar and dates in a high power blender

2. Add coconut meat, coconut mana, or coconut oil gradually while blender is on, to emulsify

3. Transfer caramel sauce to a squeeze bottle and swirl it on to the prepared cobbler

 

*Nutritional inhibitors and toxic substances found in nuts can be minimized or eliminated by soaking.
